Google Finnish recipes and you'll get a heap of websites. Alot of them are in English too. I have a few recipes. I don't know if there should be a separate thread so I'll just post a couple of my favorites here.

Finnish Blueberry Pie

Excellent blueberry taste!

Crust
2 1/4 cups flour
1/3 cup whipping cream
1 egg
1/3 cup sugar
3/4 cup butter

Filling
2 pints blueberries
sugar (optional)
1 teaspoon breadcrumbs or potato flour

1. Make the butter soft and add sugar to it; If using it.
2. Mix eggs, cream, and flour.
3. Do not beat the dough.
4. Dough must stand in cool place for 15 minutes.
5. Preheat the oven to 350°F Dough must be rolled out into a thin sheet
and laid into the greased baking sheet, shaping and raising the edges all
away around.
6. Sugar is then mixed with blueberries, if using, and the potato flour or
breadcrumbs.
7. Then the filling is spread on the dough, bake until the crust is brown.
8. Take out of oven and let it sit until pie is cooled down ten minutes and
then serve.



Finnish Salmon Soup - Lohikeitto

Ingredients:

3 cups water
1 teaspoon salt
10 white peppercorns
1 bay leaf
1 pound fresh salmon
1 small onion
1 teaspoon oil
2 large carrots
6 medium potatoes
1 1/2 cups milk, separated
3/4 cup cream
2 tablespoons flour
12 stems of fresh dill, finely cut

Directions:
Cut salmon into smaller steaks (about 1" thick), if not already sliced. In large saucepan, bring water, salmon, white peppercorns, bay leaf and salt to a boil. Cook the salmon until done all the way through, about 15 minutes, depending on thickness.

Dice onion. Place onion in a microwave-proof bowl, pour oil over and microwave on HIGH for two minutes.

While salmon is cooking, peel carrots and potatoes. Slice carrots into 2" quarter sections. Dice the potatoes. After salmon is cooked, remove from water to a plate to cool. Add the potatoes and carrots to the salmon water and boil until almost done.

After salmon has cooled, remove the skin and carefully remove all bones.

When potatoes and carrots are almost done, add 3/4 cup of milk, the cream and the onion. Mix remaining 3/4 cup milk with the flour and add to the potatoes and carrots. Cook until the potatoes and carrots are done, then add the salmon and dill. Stir gently to incorporate the salmon and dill. Serve with dark rye bread and enjoy!
